Description

Some cutting tasks do not need a full sized knife, they need something precise, pocketable and always there. Zach Severn's Cannoli is a Kiridashi-inspired fixed blade stripped back to pure utility, a 1” AUS-10 chisel ground blade with a spine thick enough at 4mm to handle piercing, scraping and detail work that would embarrass a folder twice its size. A single Vortex pattern Micarta scale keeps the profile impossibly slim while adding a burst of visual character to what is otherwise a study in minimalism. At just 21g and 101.6mm overall, the Cannoli rides in a custom Kydex sheath ready for pocket or neck carry, disappearing until the moment you need it most.

  • 1.00" AUS-10 Kiridashi Blade - Stainless steel, flat chisel ground, satin finish, 25.4mm, 4mm thick spine
  • Includes 2 scales: Vortex micarta multi-colour (Installed) + Vortex micarta black
  • Vortex Pattern Micarta Scale - Single scale construction, multi-colour pattern, slim profile, visual character with a concave opposing side.
  • Excellent for precise cuts - Woodworking, carving, crafting, leatherwork
  • Custom Kydex Sheath - Moulded for pocket, keychain or neck carry
  • Ultra Lightweight Fixed Blade - 21g, minimalist footprint, precision utility

Bought this for a purpose.

I bought the Cannoli (Vortex Micarta + Satin AUS-10) from Adventure Carry Australia specifically for leatherwork, and it’s been a big step up from constantly swapping utility blades.
It cuts through thick leather with almost no resistance — genuinely like a hot knife through butter. The biggest improvement has been edge retention. I’m no longer going through disposable blades every few cuts. When it needs a touch-up, a quick minute on the strop brings it back to razor sharp.
The satin AUS-10 holds an edge well, and the knife feels comfortable and balanced for longer bench sessions.
It also holds the line if your cutting a straight line against a steel ruler, sometimes the utility blade can wonder off, but nope this holds the line perfectly.
It also looks well-suited for bushcraft, so it won’t just stay in the workshop.
If you’re after something that outperforms utility blades for leatherwork while lasting longer and staying easy to maintain, this has been exactly what I wanted.
Thanks Mitch,
